Spinach and Feta Stuffed Chicken, wrapped in crispy Bacon

Spinach and Feta Stuffed Chicken wrapped in Bacon

Cooking time: 2 hours. Oven temp: 200 deg Celius.

Flatten 4 chicken fillets with a mallet till nice and thin. Lay down 2 x 5 strips of streaky bacon Place 2 x Flatten breasts on bacon sprinkle some portuguese chicken spice over the fillets

The Filling:

Take 300 grams of Danish feta and crumble with hands

Chop up 2 hands full of Baby spinach

Cut the last 2 streaks of bacon finely

Finly Chop 1 x Medium sized green chilli

Take a small amount of nuts and crush it

Mix everything together in a mixing bowl and with a tablespoon of olive oil

Spread the filling all over the chicken fillets evenly, leaving some space on either sides where the ends of the streaky bacon is.

Start at one end and roll everything tight and evenly so the bacon covers all the chicken. Use some toothpicks to keep the bacon in place (remember to remove these when your serve)

Place rolled chicken in a greased low-rise oven dish and bake in the oven for 40 minutes on 200 deg Celsius and an additional 5 minutes on Grill

Best served with Honeyed Sweet potato (recipe will soon make it’s way to this blog :))
