I found this amazing cupcake recipe and it’s been a hit ever since. The cake is extremely moist and finger licking good. It’s a very easy flop-proof recipe and you will win many hearts making and sharing these.
Ingredients:
1/2 cup cocoa
1 cup flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup warm water
1/2 cup buttermilk
1/4 cup canola oil
1/2 tsp vanilla essence
Method:
Pre-heat your oven to 180 deg C and line the cupcake trays with cupcake liners. Sift the cocoa,flour, baking soda and salt into a mixing bowl. Add the egg, water, buttermilk, oil and vanilla essence and mix untill you have a smooth consistency.
Fill the cupcake liners with 1/3 cup of the mixture. I have found a piping bag works the best.
Bake for 18 to 20 minutes. Test with a toothpick to see if the mixture is baked. f it comes out clean, then your batch should be ready.
Cool for at least 30 minutes before you get creative with the icing.
Makes approx 18 cup cakes per batch.
